Let’s Talk about Shrimp Kisses

With all the holiday parties and potlucks that occur during this time of the year, I thought it would be nice to share a quick and easy appetizer receipe.  I’m reading The Drowning House by Elizabeth Black – set on Galveston Island so I’m sharing a recipe for Shrimp Kisses, a popular party food on the island.

Makes 20 shrimp kissesShrimp Kisses with Feta Cheese

20 shrimp (peeled and deveined medium)
1 cup feta cheese (crumbled)
3 jalapeno peppers (seeded and cut into slivers)
10 slices bacon (thick sliced, cut in half)
20 water (toothpicks soaked)

  1. Preheat the oven to 450 degrees F (220 degrees C).
  2. Place a crumbles of feta cheese into the butterflied opening of each shrimp and top with slivers of jalapeno pepper. Wrap half of a slice of bacon around each one to conceal the cheese, securing with toothpicks. Place on a cookie sheet.
  3. Bake for 10 to 15 minutes in the preheated oven, until bacon is browned.
This follows a basic life rule:  Bacon makes everything better!
